Cool Completely

Let boiled potatoes cool to room temperature before refrigerating. Hot potatoes in the fridge raise the internal temperature and can affect other food. Cool them on the counter for 1-2 hours, but don't leave out longer than 2 hours total.

Choose Container

Place cooled boiled potatoes in an airtight container or wrap bowl tightly with plastic wrap. Airtight storage prevents potatoes from absorbing fridge odors and drying out. Glass or plastic containers both work well.

Refrigerate Promptly

Store in the main part of the refrigerator, not the door. The door temperature fluctuates too much. Use boiled refrigerated potatoes within 3-5 days for best quality and texture.
